“So, honestly, what is a Saturday without pancakes?” That was basically my first thought when I decided to start my first 21 Day Fix. I embarked on a mission to create the best pancake recipe using Vanilla Shakeology |which, side note, is far and above the BEST protein I’ve EVER tried|. I found many recipes using mashed bananas but I just can’t stand the taste of ripe bananas because I’m such a weirdo.
Who likes green, unripened bananas? Oh yeah, that’s me.
Anyways, my love for all things coconut (flakes, flour, oil, milk… is coconut its own food group yet?) I knew I wanted to incorporate coconut flour. Finally, I think I perfected the end all, be all of protein pancakes… insert heart eyes emoji. I’m estimating about 2 red, 1 yellow, 1 orange, and 1 tsp for this recipe. It’s not an all day, every day food BUT it will definitely curb those Saturday morning cravings in a healthy way =)
1 Scoop (or Packet) Vanilla Shakeology
1 Tbsp Coconut Flour
2 tsp Ground Flaxseed
½ tsp Cinnamon
1 ½ tsp Baking Powder
2 Egg Whites
4 Tbsp Coconut Milk
¼ tsp Vanilla Extract
1 ½ Tbsp Greek Yogurt
Mix the Shakeology, coconut flour, flaxseed, cinnamon, and baking powder together in a small bowl. Then, add the eggs, coconut milk, vanilla, and greek yogurt. Mix until well combined. Heat a large skillet and melt coconut oil. Once it has heated, pour mixture into three pancakes. Once sides have firmed up enough, carefully flip and cook until the middle is cooked through.
These are sooo filing, one recipe is almost enough for 2 people! As you can see, I topped mine with a bit of pure maple syrup and strawberries, SO GOOD!
